Tonight is date night and instead of going out sifting through menus of what my dietary lifestyle allows me to eat I decided to stay home and cook for the both of us.
So here’s the rundown
What you will need from your cupboard
Coconut oil, extra virgin olive oil and apple cider vinegar
What you will need from your fridge
Spinach, avocado and chicken
Here are the steps:
Put the coconut oil in pan have temperature at medium heat for a few minutes
I use chicken souvlaki skewers from my favorite butcher (La boucherie in the St Lawrence market in Toronto)
Remove the chicken off the sticks and empty the chicken breasts into the pan when heated and begin to cook
While the chicken is cooking begin to prepare your salad, I use spinach because it’s higher in fibre and antioxidants than lettuce.
Empty the spinach into a large mixing bowl.
I then use a tablespoon each of extra virgin olive oil and apple cider vinegar. Not only does it taste great but I find the apple cider vinegar controls my appetite and is very low in cholesterol.
Use a pair on tongs to mix the salad and oils together.
The time you’ve done all the mixing and prep, the chicken should be done if not make sure the chicken is cooked before you mix it with your salad. Last thing you want is salmonella poisoning!
Place the chicken on the spinach. I then top off the chicken by adding half an avocado to the mix.
Use the tongs once again to mix all the ingredients
So that’s it! Quick and easy 15 minute chicken and avocado salad! More reason to stay in with your date who also loves to eat healthy!
